In 2002, Joël Remy – featured on our website among our loyal winegrowers – acquired the Maison. He modernized the equipment for greater diversity and brought his expertise, acquired over five generations, raising the quality of the Maison’s Burgundy crémants to its peak.
Quality and Tradition are the key words of Maison Paul Chollet’s commitment, offering us a varied range of products that respect the Burgundian terroir.
Today, it is his daughter Manon and her husband Remi who are at the helm of the estate, perpetuating the know-how of this exclusively family-run business.
Primarily made with Pinot Noir, the effervescence of Maison’s Burgundy crémants is delicate. The finesse and elegance of the bubbles release, depending on the climate, discreet aromas of white flowers, gingerbread, honey, or peach.
This bouquet is accompanied by a beautiful length in the mouth full of freshness.
